This Cookie Wednesday, I posted a picture of my annual pumpkin cookies on Instagram and promised to blog the recipe later this week.
But the thing is, I didn’t even eat any of these. And I didn’t entirely enjoy making them. So you can see why the thought of sitting down and writing all about them didn’t exactly thrill me.
Why not eat them?
Why would anyone not enjoy making them?
Well, despite being your standard, factory-grade white girl….
I don’t like pumpkin.
I know… it’s a little weird. I’m supposed to be hash-tagging pictures of my pumpkin spice latte on Instagram, chowing down on a bowl of Pumpkin Spice Cheerios, all while wearing a messy bun, chunky sweater and adorable boots– straight up until peppermint season begins, and yet…
Here I am… no bun, no boots, no love of pumpkin spice.
Now that I’m 36, I have less tolerance for eating food I find to be “meh” simply because the season dictates I should. I will eat one pumpkin thing this year: these muffins. And, to be completely honest, I’ll likely just eat the Nutella off the top.
I just don’t like it. Not the overly-processed “barely tastes like pumpkin at all” stuff, and not the “homegrown free-range organic local from my own pumpkin” stuff.
And that’s okay! I’m learning that being happy with who I am means letting go the things I’m not– and that includes a seasonal feigned love of pumpkin spice everything.
Stay with me! They are amazing!
Brown sugar, apples, pears, and butter…. Baked all together, the flavors caramelize into a sweet, tart, warm, soft-bordering-on-gooey “brownie” that will knock your socks off.
So good. Just ask this kid, who did NOT give me a chance to try for a second photo…
** Side Note: Lest anyone think I only take pictures of one of my three sons…. He’s the nail-biter and therefore has the only clean nails for up-close pictures. There you go. I am afraid of being judged.**
These brownies are pretty fantastic all on their own, but are completely “company worthy” when topped with ice cream and this homemade caramel! Yes, a caramel apple sundae. Pumpkin spice whaat? It’s all about the apple in this house!
- 1 stick of salted butter, melted
- 1 Cup brown sugar (or Panela sugar)
- 1 egg
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 apple, peeled, cored, chopped into 1/2-inch chunks
- 1 pear, peeled, cored, chopped into 1/2-inch chunks
- 1 Cup white whole wheat flour
- Preheat oven to 350 degrees F.
- In a medium mixing bowl, combine butter, sugar, baking soda, salt, baking powder, cinnamon, and egg. Stir.
- Add in chopped pears and apples, mix to coat.
- Add in flour and stir until just combined.
- Pour into a greased 8x11 baking dish.
- Bake for 28 minutes.
- Let cool a half-hour before cutting and serving.
